How to Cook Pork Loin Roast

This easy pork loin roast recipe has just a few steps to prep and get in the oven to bake. The first step for this pork loin recipe is to prepare the roast. The roast should be ready to go from the butcher, if not, trim off any excess fat before seasoning.

Prepare the roast by seasoning liberally on each side with salt and pepper.

In a large cast iron pan or skillet, heat olive oil and sear the roast on each side. You want the pork roast to be just browned on east side, so sear it for 3-4 minutes on each side.

Once your roast is seared, add in the vegetables, drizzle with the orange glaze and place in a 350ºF oven.

How Long to Cook Pork Loin Roast

Once you have placed your pork roast in the oven, you will want to roast it for 15-20 minutes per pound. The roast used for this recipe was 2 1/2 pounds and took about 40 minutes to cook to an internal temperature of 145ºF.

For tender, juicy pork cook the roast until the internal temperature reaches 145ºF. The best way to measure the temperature is with an instant read thermometer. If you would like your roast to be more well done, you can cook it to 165ºF.

Remove the pan from the oven and allow to rest at least 10 minutes before slicing and serving.

Ingredients

  • 3 pound pork loin roast
  • 3 tbsp olive oil
  • salt and pepper
  • 2 sweet potatoes, diced
  • 8 brussels sprouts, quartered
  • 1 white onion, diced
  • 2 rosemary sprigs (or 1 tsp dried rosemary)

Orange Glaze

  • 1/2 cup fresh orange juice
  • 2 tsp orange zest
  • 1/4 cup brown sugar
  • 1 tsp red pepper flakes
  • 1 tsp grated ginger

Instructions

  • Preheat oven to 350ºF. Prepare roast by trimming off any excess fat. Season the pork roast on each side liberally with salt and pepper.
  • In a cast iron pan or oven safe skillet, heat up olive oil over medium-high heat. Sear the pork loin roast on all sides until brown, about 3-4 minutes.
  • Add the onion, potatoes and brussels sprouts to the pan and pour the orange glaze over the roast and the vegetables.
  • Place in the oven and roast for 15-20 minutes per pound, or until the internal temperature reaches 145ºF. For a more well done roast, cook to 165ºF. (This roast took 35 minutes to cook to 145ºF)
  • Remove roast from the oven and allow to rest for at least 10 minutes before slicing. You can just leave it in the pan while it rests.

Orange Glaze

  • In a small bowl combine the orange juice, orange zest, ginger, brown sugar and red pepper flakes. Mix until the sugar has dissolved.

Notes

When dicing the sweet potatoes, make sure they are about only about a half inch thick to make sure they are done cooking when the roast is.
