I decided I want to make scalloped potatoes so I went to my recipe file and came up with a copy of this one which I had made back in 2021 and marked "Excellent!" (I haven't really been doing much cooking in recent years which is probably why I hadn't made it again.) This time I will make the recipe as is for hubby, plus make a second version using vegan substitutes for myself. I will let you know how both come out.

These potatoes were so easy. I used Yukon gold potatoes and left the skin on cuz they’re thin but mostly I was lazy. The timing was perfect and the sauce thickened up beautifully. It’s Easter so these went well with the ham of course. Thank you for another yummy recipe.

In reply to <a href="https://feedingyourfam.com/easy-scalloped-potatoes/#comment-809">Adrian</a>.

Of course. If you want to freeze these, bake as directed for the first 60 minutes, the potatoes won't be cooked all the way through. At this point, let it cool, cover and place in the freezer for up to 3 months. Place back in the oven, covered in foil at 350 for 45-60 minutes, until cooked through. Remove the foil for the last 10-15 minutes to let the cheese brown.
