How to Make Easy German Apple Pancakes

First, preheat the oven to 400ºF. Place your 12 inch cast iron skillet or 8 x 8 inch baking dish in the oven with the butter. As the oven heats up it will warm up the pan and melt the butter. Remove the pan as soon as the butter has melted.

In a large mixing bowl combine the eggs and milk, stir until the eggs are well beaten. Add in the flour, salt, cinnamon and nutmeg and stir to combine. An easy way to mix this German pancake is in a blender, it will come out nice and smooth every time.

How to Make Caramel Sauce for German Apple Pancakes

While the German Apple Pancake is baking in the oven prepare the Caramel Sauce to drizzle over the top or serve with the pancakes when they are ready to serve.

In a sauce pan over medium heat, melt the butter. Add in the heavy cream and brown sugar, stir until the sugar has dissolved.

Bring to a boil and simmer for 5 minutes, stirring constantly. The mixture will change color and begin to thicken as it cooks. Remove from the heat and add in the vanilla, stir to combine.

What Kind of Apples can I use for Apple Pancakes?

For this recipe I used Gala Apples, they don’t get mushy and have a sweet flavor. You can also use Granny Smith, Jonagold, Pink Lady or Golden Delicious. I would not recommend using Red Delicious, they get too mushy when baked.
