How to Make Roasted Sweet Potatoes

This oven roasted sweet potatoes recipe is so simple to make. Start by peeling and washing potatoes. Slice each sweet potato into a 1 inch piece. Try to make all of your sweet potato pieces the same size to ensure even cooking. If you have large pieces, they will take longer to cook while your smaller pieces will be done and getting smushy.

To slice the sweet potatoes into 1 inch pieces, first slice in half lengthwise, then cut each half in half again down the middle. Slice again down the length into 1 inch pieces.

In a large bowl combine the sweet potatoes slices, olive oil, honey, cinnamon, nutmeg, dried cranberries and pecans. Mix until everything is well coated.

Place into a greased 9 x 13 inch pan and place 4, 1 tbsp slices of butter on top of the sweet potatoes.

Bake in a 400ºF oven for 30-40 minutes, until potatoes are tender when poked with a fork. Remove from the oven and give a quick stir.

  • 3-4 sweet potatoes, peeled and chopped into 1 inch pieces
  • 1 tbsp olive oil
  • 1/3 cup honey
  • 1/2 cup dried cranberries
  • 1/4 cup pecan pieces
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 tsp salt
  • 4 tbsp butter

Instructions

  • Preheat oven to 400ºF. Grease a 9 x 13 inch baking dish.
  • In a large mixing bowl combine sweet potatoes, dried cranberries and pecans. Pour in olive oil, honey, cinnamon, nutmeg and salt. Stir until everything is well coated.
  • Transfer sweet potato mixture to the prepared baking dish. Dot the top of the potatoes with slices of butter.
  • Bake in preheated oven for 30-40 minutes, until a fork slides easily into the potatoes.
  • Remove from the oven, stir and serve warm.
