Chocolate Peanut Butter Rice Krispie Bars

If I had to pick one flavor combination that will never go out of style it would definitely be peanut butter and chocolate. This recipe is perfect for a quick weeknight sweet tooth craving, or this is also one that I love to bring to family get togethers.

You can slice these into little 1 inch squares and they are the perfect little, sweet bite and they go a long way when they are bite sized.

Peanut Butter Chocolate Rice Krispie Ingredients

This is all you will need to make this simple Rice Krispie Treat recipe:

  • 6 cups Rice Krispies cereal
  • 1 cup corn syrup
  • 1 cup sugar
  • 1 cup creamy peanut butter
  • 1 1/2 teaspoon vanilla
  • 1 1/4 cup semi-sweet chocolate chips

Easy Peanut Butter Rice Krispie Treats

To make this simple treat recipe only takes about 10 minutes. First, combine the corn syrup and sugar in a sauce pan over medium heat. Stir over the heat continually until the sugar dissolves and the combination just comes to a boil. 

Add in the vanilla and stir to combine.

After the vanilla has been mixed into the corn syrup and sugar mixture, remove the pan from the heat. In the next step, stir the peanut butter into the hot mixture and stir until smooth. 

Pour the peanut butter mixture, while it is still warm and runny, over the Rice Krispies cereal in a large mixing bowl. Stir until all of the cereal is covered. 

Press the peanut butter Rice Krispies into a greased 9 x 13 inch baking dish. You can use clean hands to press the mixture into the pan or the back of a spoon works great too.

To make the chocolate topping; place the chocolate chips in a microwave safe bowl. Microwave on high for one minute, stir and microwave for an additional 30 seconds if the chocolate is not smooth and melted. 

This can also be done in a double broiler over the stove. Stir until all of the chocolate has melted. 

Use a spatula to spread the melted chocolate over the top of the peanut butter Rice Krispie bars. Allow the chocolate to harden and the Rice Krispies to cool before slicing….if you can wait! My fam never can, but these are pretty good when they chocolate is still melty and the peanut butter is warm!!

How to Store Peanut Butter Rice Krispie Bars

If you happen to have any leftovers of these peanut butter Rice Krispie bars, cover the pan tightly with plastic wrap or aluminum foil and store in a cool dry place for 2 days. These can also be stored in an air tight container for up to 2 days. 

Can I make this recipe ahead?

This peanut butter Rice Krispies recipe is so easy to make ahead. Make this no more than 2 days in advance and store in an air tight container until ready to serve. If you wait any longer than 2 days, the Rice Krispies will become soft.

Can I freeze Peanut Butter Rice Krispies?

You can freeze this recipe for peanut butter Rice Krispies. To freeze this recipe, make the recipe up until the point you would melt the chocolate. Press the Rice Krispies into the prepared baking dish and allow to cool completely. 

Once they have cooled completely, remove from the pan and wrap tightly in plastic wrap. Place the wrapped bar into a large zip top plastic bag and store in the freezer for up to 2 months. 

To thaw, place on the counter for 1-2 hours until no longer frozen. When the bars have thawed, melt the chocolate and spread on top of the bars before slicing.

Ingredients

  • 6 cups Crisp Rice Cereal
  • 1 cup corn syrup
  • 1 cup sugar
  • 1 1/2 tsp vanilla
  • 1 cup peanut butter, creamy
  • 1 1/4 cup chocolate chips

Instructions

  • In a sauce pan over medium heat, combine the corn syrup and sugar. Stir over the heat until the sugar dissolves and the mixture comes just to a boil.
  • Add in the vanilla and stir.
  • Remove the pan from the heat and add in the peanut butter, stir until smooth.
  • Place the crisp rice cereal in a large mixing bowl. Pour the peanut butter mixture over the cereal and stir until it is all covered.
  • Press the cereal and peanut butter mixture into a greased 13 x 9 x 2 inch pan.
  • Place the chocolate chips into a microwave safe bowl and cook for one minute. Stir and cook for 30 seconds more if needed until smooth and melted. Spread the melted chocolate over the top of the rice krispie bars.
  • Allow to cool and slice into squares to serve.

Notes

  • These are best served fresh, but if you do happened to have leftovers, store in an air tight container and enjoy within 2 days.
