Chocolate Peanut Butter Sandwich Cookies are so rich and delicious, the perfect combination of peanut butter and chocolate. This sandwich cookie recipe is so easy to make, start with a simple 3 ingredient peanut butter cookie, then add a layer of microwave ganache frosting.
Preheat oven to 350ºF and line a baking sheet with parchment paper
In a medium sized mixing bowl, with an electric mixer, combine the peanut butter, sugar and egg.
Scoop out the cookie dough onto the prepared baking dish, leaving at least 1 inch between the cookies. Using a fork, press the cookies down slightly with a criss cross pattern. You can dip the fork in sugar before pressing the cookies down if desired.
Bake for 7-10 minutes, until just golden on the edges. Allow to cool completely.
Microwave Ganache
Combine the chocolate chips and heavy cream in a microwave safe bowl.
Microwave for 1 minute and 10 seconds.
Stir until smooth. Allow to cool before spreading between two cookies to make a cookie sandwich.
