This easy air fryer roasted salsa recipe comes together in just a few minutes and is loaded with fresh tomato flavor, perfect for dipping or serving over tacos!
Prepare the vegetables by peeling and slicing the onion into one quarter. Remove 2 cloves of garlic from the bulb and leave them in the skin.
Slice the top off the jalapeno and remove the ribs and seeds by running a paring knife around the inside of the jalapeno around the sides. The seeds and ribs should pull away from the side and dump out when the jalapeno is turned upside down. If you want a spicier salsa, you can leave the seeds and ribs in the jalapeno. Slice the jalapeno in half.
Drizzle olive oil over all of the vegetables.
Place in the basket of an air fryer.
Turn the temperature to 400ºF. Fry for 15 minutes, until vegetables are charred.
Remove vegetables from air fryer basket and place in a blender or food processor. Add in cilantro, salt, sugar and lime juice. Blend until smooth or desired consistency.
Please feel free to add more or less salt, lime juice to taste.
