This simple Sauteed Zucchini and Yellow Squash Recipe is a perfect side dish year round. Loaded with zucchini, yellow squash, onions, garlic and topped with parmesan cheese!
Slice the zucchini and yellow squash into equal rounds.
In a large skillet over medium heat, pour in the olive oil and heat until shimmering.
Add in the onion and saute, stirring frequently, until softened (2-3 minutes)
Add in the sliced zucchini and yellow squash and continue to saute until soft, about 3 minutes.
Add the minced garlic and cook until fragrant, about 45 seconds
Top the sauteed vegetables with the grated Parmesan cheese and place on the top rack of the oven under the broiler for 3-5 minutes, until the cheese is melted.
Season with salt and pepper to taste
