Peach Galette is fresh fruit piled high in the center of a pie crust and then the crust is folded around the edges making almost like a peach pizza pie.
Preheat oven to 450ºF. Line a baking sheet with parchment paper.
Toss thinly peeled and sliced peaches with sugars, cinnamon, salt and corn starch
Place pie crust onto the baking sheet. Fill the center of the pie crust with the peach mixture, leaving 1 1/2 inches from the outside edge of the crust.
Carefully fold in the edge of the crust, folding and pinching down as you go around, keeping the peaches in the center
Mix together the egg and the cream and brush a little on the folded crust. Sprinkle with extra sugar
Bake for 25-30 until the crust is golden and the filling is bubbly and cooked down. Allow to cool for 15-20 minutes before serving.
