This simple recipe for Teriyaki Chicken Skewers is made with chicken thighs and simple, pantry staple ingredients. Perfect for a weeknight dinner or make a whole bunch to feed a crowd.
Combine the ingredients for the teriyaki marinade in a separate mixing bowl
Place the cut up chicken into a zip top bag or air tight container. Pour 1/2 of the teriyaki marinade over the chicken. Marinade in the refrigerator for at least 30 minutes, up to over night.
Soak wooden skewers for at least 30 minutes, before threading the chicken pieces onto the skewers.
Place chicken onto grill that has been heated to High, 375-400º F
Cook the chicken for 5-7 minutes per side.
When the chicken is almost done or at an internal temperature of 145º F, brush the remaining teriyaki sauce on all sides of the chicken skewers.
Continue to cook until the chicken is cooked through and reached an internal temperature of 165º F
Remove the chicken from the grill and cover will foil, allow to rest for 5 minutes before serving.
