In a large mixing bowl, or stand mixer, combine together the flour, yeast, sugar and salt.
Pour in the water and olive oil. Mix together until a soft ball forms. If the dough is too sticky, add 2-3 tablespoons of additional flour at a time until the dough pulls away from the sides of the bowl.
Knead the dough in the mixer or on a floured surface for 5 minutes.
Place the dough into a greased bowl and cover with a clean towel. Allow to rise for 30 minutes.
Roll out the dough into a rectangle
Garlic Butter
Combine the ingredients for the garlic butter in a mixing bowl with an electric mixer
Spread the garlic butter over the rolled out dough and sprinkle with shredded mozzarella cheese.
Roll the dough from one long end to the other. Slice in half and then halves again until all the rolls have been sliced.
Place the rolls into a greased baking dish. Top with additional cheese as desired.
Bake in a 450ºF oven for 15-20 minutes until the cheese is golden and bubbly.
