Preheat oven to 375º F, prepare a 9 x 13 inch baking dish with cooking spray
In a mixing bowl combine diced peaches with cornstarch, lemon juice and 1/2 cup of sugar. Toss to coat.
In a large mixing bowl whisk together the flour, baking powder, 1 cup sugar, salt, baking powder, cinnamon and nutmeg.
Grate the cold butter into the dry ingredient mixture and mix together with clean hands or a pastry knife until a sand like mixture. Add in the egg and vanilla and stir to combine.
Press half of the crumb mixture evenly into the bottom of the prepared baking dish.
Pour the peaches over the bottom crust and then sprinkle the remaining crumb mixture over the top of the peaches.
Bake for 35-40 minutes, until the top is golden brown and the peaches have cooked down. Cool completely before slicing.
