It is totally possible to make a restaurant quality steak right at home on the stove. This Cast Iron New York Steak recipe is my go to recipe for a delicious, perfectly home-cooked steak.
While the oven is heating, season steaks on both sides liberally with sea salt and ground black pepper. Allow to sit at room temperature for 10 mintues.
Heat a 12 inch cast iron skillet over medium-high heat. Add in the avocado oil and 2 tablespoons of the butter. Place the steaks into the pan and cook on each side for 2-3 minutes until browned and a little crispy.
Add in the last tablespoon of the butter with the smashed garlic and thyme sprigs. Spoon the butter over the steaks in the pan as they are cooking.
Place the skillet into the oven for 5-8 minutes, until the steaks are cooked to the desired doneness. Check the temperature with an instant read thermometer for accuracy.
Rest the steaks on a cutting board for 5-10 minutes before slicing.
