It is just about impossible to resist the sweet flavors in this Strawberry Oatmeal Crisp recipe. This Strawberry Crisp in a Cast Iron Skillet is sugary, sweet strawberries topped with a crunchy, buttery oatmeal crisp to make a simple, crowd-pleasing dessert.
Preheat oven to 375º F and grease a 12 inch cast iron skillet if needed
Prepare Strawberry Base- dice 6 cups strawberries into small, bite sized pieces. Place into the prepared cast iron skillet and add in the 1/4 cup all purpose flour, 1/2 teaspoon cinnamon, 1 tablespoon lemon juice, 2 teaspoons lemon zest, 1 teaspoon vanilla and 1/4 cup sugar. Stir in the skillet to coat the strawberries and combine the mixture.
Prepare the Oatmeal Topping- in a small mixing bowl combine the 1 cup rolled oats, 1 cup all purpose flour, 3/4 cup brown sugar, 1/4 teaspoon cinnamon, and 1/2 teaspoon salt. Pour over the 3/4 cup butter and mix until everything is coated and the crumb mixture resembles coarse sand.
Bake- Sprinkle the oatmeal crumb topping over the strawberry mixture and bake in an oven set to 375º F for 30-35 minutes. The crisp will be bubbly on the bottom and the oatmeal topping will be browned and crispy. Serve warm.
