This simple recipe for Sweet and Sour Sausages is loaded with veggies, Italian sausage and covered in a delicious sweet and sour sauce. This is perfect for a quick weeknight meal, or delicious as an appetizer.
In a large 12 inch skillet over medium high heat, brown the sausage 5 minutes on each side. Remove the sausage from the pan and slice into 1 inch pieces. Drain any grease from the pan.
Add in the carrots, onion, green bell pepper, pineapple and sausages back to the pan.
Cook and stir for 2-3 minutes, until vegetables become tender.
While the vegetables and sausage are cooking, in a separate bowl combine the pineapple juice, lemon juice, brown sugar, soy sauce, ginger and cornstarch.
Pour pineapple mixture over vegetables and sausage and bring to a boil. Turn down the heat and simmer for 7-10 minutes, until sweet and sour sauce thickens and sausages are cooked through.
Garnish with green onions and serve over warm rice.
