Grease a 9 x 13 inch baking dish. Set aside 1 cup of the mini marshmallows
In a large pot over medium heat, melt the butter and add in the remaining marshmallows and brown sugar. Stir until the marshmallows are melted.
Add in the vanilla and chocolate chips, stir until the chocolate is melted. Turn off the heat and pour in the Golden Grahams Cereal. Fold the cereal into the marshmallow mixture until coated.
Pour half of the covered Golden Grahams into the prepared pan and spread out using the back of a greased spoon. Sprinkle half of the reserve marshmallows over the cereal.
Press the remaining cereal mixture in the pan and top with the remaining marshmallows and extra chocolate chips as desired.
Allow to cool for at least 10 minutes before slicing.
Notes
To toast marshmallows on top, use a kitchen torch or place in the oven under the broiler until the marshmallows are toasty
