In a large mixing bowl, or stand mixer, combine together the water, olive oil, yeast and sugar. Mix to combine.
Add in 2 cups of the flour and the salt. Mix together. Pour out onto a floured surface and knead for 4-5 minutes, adding additional flour as needed to produce a soft ball of dough. It should not be sticky.
Place the dough back into a greased mixing bowl and cover with a clean kitchen towel or plastic wrap and allow to rise for 30-45 minutes.
Punch down the dough and cut into two equal halves. Cover the half you are not working with to keep it from drying out.
Roll out the dough with a rolling pin until it is into a 10-12 inch circle, depending on how thick you want your crust to be.
Place into a 10 inch cast iron pan or onto a greased baking sheet. Roll up around the edges to form the crust. Just roll the edges towards the center of the circle.
Top with pizza sauce, cheese and your favorite toppings. If desired, brush the crust with olive oil and sprinkle with garlic salt.
Bake in a 450º F oven for 15-20 minutes, until the crust is golden and the cheese is melted.

To make pizza dough ahead: This pizza dough can be made ahead and enjoyed later. To make ahead prepare the dough and knead for 4-5 minutes. Place in a greased bowl and cover tightly. Place in the refrigerator for up to 3 hours before use. To use, allow to sit and rise in a warm place for at least an hour before forming into crusts.
To freeze pizza dough: Prepare the dough and knead for 4-5 minutes. Slice into two halves and place into greased zip top freezer bags. The dough can be frozen for up to 1 month. When you are ready to use it place it in the refrigerator overnight to thaw and then allow to rise on the counter for 1 1/2- 2 hours before topping and baking.
