Preheat oven to 350º F and line baking sheets with parchment paper if using
With an electric mixer or stand mixer, cream together the butter, peanut butter, 1 cup of sugar, brown sugar, vanilla and eggs until well combined.
Sift in the dry ingredients; flour, baking soda and salt. Mix until a soft dough is form.
Place the remaining 2 tablespoons of sugar into a bowl. Pinch off the dough and roll into one inch balls, roll each ball in sugar and place on the baking sheet.
Bake for 8-10 minutes.
Place the cookies onto a cooling rack and while still warm, place an unwrapped chocolate kiss in the center of the cookie.

Store cookies in an airtight container for up to 4 days on the counter
Cookies can be frozen, place in an air tight container with parchment paper between layers of cooled cookies. Freeze for up to 3 months.
