Preheat oven to 400º F. Line a baking sheet with parchment paper.
Wash and dry sweet potatoes. Using a sharp kitchen knife, slice the sweet potatoes into halves lengthwise.
Place the sliced sweet potatoes, cut side down onto the prepared baking sheet. Drizzle with oil and rub on all sides of the potatoes. Sprinkle with sea salt.
Bake the sweet potatoes for 20-35 minutes, depending on the thickness of the sweet potatoes
Test the sweet potatoes by poking with a fork or sharp knife, if it slides easily into the flesh, the potatoes are done.

Depending on the thickness of the sweet potatoes, they can be cooked at different times. If smaller ones are done first, remove them from the oven and allow the larger sweet potatoes to bake longer.
