Preheat oven to 375º F and grease a 10.25 inch cast iron skillet
In a large mixing bowl whisk together 1/2 cup butter melted, 1/2 cup sugar, 1/2 cup brown sugar, 2 eggs, 1/2 cup milk, 1 1/2 teaspoon vanilla bean paste. Mix until the sugars have fully combined.
Add the 1 cup all purpose flour, 1/2 teaspoon fine sea salt, 1 1/2 teaspoons baking powder, 1 teaspoon ground cinnamon, and 1/4 teaspoon ground nutmeg. Use a spatula or wooden spoon to mix the batter together until smooth.
Fold the apples into the batter.
Pour the apple cake batter into the prepared cast iron skillet. Bake for 35-40 minutes, until a toothpick inserted in the center comes out clean.
Allow the cake to cool for 30 minutes before slicing or dusting with powdered sugar.
