Preheat oven to 350º F and grease a 12 inch cast iron skillet or 9 x 13 inch pan
Combine the 6 apples, 1 tablespoon lemon juice, 1/2 cup brown sugar, 1 teaspoon cinnamon, 1/2 teaspoon nutmeg, 1 tablespoon cornstarch and 1/8 teaspoon salt. Place into a 12 inch cast iron skillet. Bake for 10-15 minutes while you prepare the topping.
In a mixing bowl whisk together the 1/2 cup butter, 3/4 cup sugar, 1 egg, 3 tablespoons sour cream, 1/4 cup milk, and 1 teaspoon vanilla until well combined. Add in the 1 1/2 cups all purpose flour, 1 1/2 teaspoons baking powder, and 1/2 teaspoon salt mix with a wooden spoon until a soft batter is formed. It will be in between a cake batter and cookie dough.
Spoon the topping over the apples and spread out, it's okay if the topping has some gaps where the apples can be seen.
Bake for 35-40 minutes until the apples are bubbly and soft and the cake topping is golden brown.
Allow the cobbler to rest for at least 10 minutes for the filling to thicken.
