Ingredients
4cups cooked rice
8ozbacon, sliced into 1/2 inch strips
1cupwhite onion, diced
3/4cupfrozen carrots and peas
1stalk celery, sliced
3eggs, beaten
2-3tbspsoy sauce
2tspsesame oil

Instructions
Prepare rice according to package instructions.
Heat a large wok or skillet over medium-high heat. Cook sliced bacon until just crispy, remove from skillet and drain grease, leaving about 1/2 teaspoon in the pan to cook the eggs.
To the skillet add the beaten eggs and scramble. Remove from the pan when cooked through.
Pour in the sesame oil and cook the onion, vegetables and celery for 4-5 minutes until the onion is translucent.
Add back in the eggs and bacon to the skillet. Add in the rice and stir until everything is well combined.
Pour on the soy sauce and stir until the everything is well seasoned.
