Ingredients
3poundpork loin roast
3tbspolive oil
salt and pepper
2sweet potatoes, diced
8brussels sprouts, quartered
1white onion, diced
2rosemary sprigs (or 1 tsp dried rosemary)
Orange Glaze
1/2cupfresh orange juice
2tsp orange zest
1/4cupbrown sugar
1tspred pepper flakes
1tspgrated ginger

Instructions
Preheat oven to 350ºF. Prepare roast by trimming off any excess fat. Season the pork roast on each side liberally with salt and pepper.
In a cast iron pan or oven safe skillet, heat up olive oil over medium-high heat. Sear the pork loin roast on all sides until brown, about 3-4 minutes.
Add the onion, potatoes and brussels sprouts to the pan and pour the orange glaze over the roast and the vegetables.
Place in the oven and roast for 15-20 minutes per pound, or until the internal temperature reaches 145ºF. For a more well done roast, cook to 165ºF. (This roast took 35 minutes to cook to 145ºF)
Remove roast from the oven and allow to rest for at least 10 minutes before slicing. You can just leave it in the pan while it rests.
Orange Glaze
In a small bowl combine the orange juice, orange zest, ginger, brown sugar and red pepper flakes. Mix until the sugar has dissolved.
Notes
When dicing the sweet potatoes, make sure they are about only about a half inch thick to make sure they are done cooking when the roast is.
