In a large mixing bowl whisk together the 3 cups all purpose flour, 2 1/4 teaspoons instant yeast, 1/2 teaspoon fine sea salt, and 1/3 cup sugar.
Stir in the 1/3 cup butter and 1 large egg and mix to make a crumbly mixture.
Pour the 1 cup milk (110-115º F) into the mixing bowl with the flour. Stir with a dough hook or in an electric mixer for at least 5 minutes until a soft, sticky dough is formed and the dough pulls away form the side of the bowl
Cover the bowl tightly with plastic wrap and rise for 30 minutes
Make the cinnamon butter by mixing together the melted 1/2 cup butter, 3/4 cup brown sugar, 1 tablespoon cinnamon, and 1 teaspoon vanilla bean paste or extract
Roll the dough out onto a floured surface into a 11 x 7 inch rectangle. Spread cinnamon butter over the dough.
Roll from one long end to the other. Cut into 8-10 cinnamon rolls, about 1 1/2 inches each
Place into a greased 12 inch cast iron skillet, cover and let rise 30-45 minutes until doubled. Bake at 350º F for 20-25 minutes until golden brown.
Make the cream cheese frosting by combining the 8 ounces cream cheese, 3 tablespoons butter , 1 1/2 cup powdered sugar, and 1 teaspoon vanilla bean paste or extract with an electric mixer until combined. Add in the 1 tablespoon milk and mix until smooth and desired consistency.
Allow to cool for 10 minutes before frosting.
