Cornmeal biscuits are buttery and delicious. Made with simple pantry ingredients and baked in a cast iron skillet so they always come out golden and crispy.
Combine the dry ingredients-in a mixing bowl mix together the 2 cups all purpose flour, 1 cup cornmeal, 1 tablespoon baking powder, 1 teaspoon salt, and 2 tablespoons sugar
Add the butter- using a cheese grater, grate the cold 1/2 cup butter into the dry ingredients and toss to coat with the flour mixture.
Pour in the buttermilk-pour the cold 1 cup buttermilk into the center of the dry ingredients and mix together with a wooden spoon until a soft, slightly sticky dough is formed.
Roll and Cut the Dough-place the biscuit dough onto a lightly floured surface and roll out until it is about 1/2-3/4 inch thick. Cut the biscuits into rounds until 10-12 biscuits are cut.
Bake- bake in a 425º F oven for 12-15 minutes until puffy and golden brown
