Tender pork tenderloin is cooked perfectly in a cast iron pan with potatoes and green beans to make an easy dinner and one-pan meal. This pork tenderloin comes out juicy and delicious every time.
Combine spices. Season tenderloin on all sides with half of the spice mixture.
Season the potatoes and green beans with the remaining seasoning mix
Heat the cast iron over medium high heat. Pour in 2 tablespoons of avocado oil and swirl it over the bottom of the pan.
Cook the pork tenderloin for 2 minutes per side. Add the potatoes and onions to the pan around the tenderloin, season and cook for 10 minutes in the oven.
Add in the green beans and cook an additional 10 minutes until the pork reaches 145º F and the potatoes are fork tender.
Remove from the oven and allow the tenderloin to rest for 10 minutes before slicing.

Two pork roasts can be cooked at the same time in the pan if buy two in the same package. Just follow the recipe the same and brown both at the same time. The cooking time will stay the same.
