This Cast Iron Skillet Pecan pie is all the gooey goodness of a pecan pie with a different kind of charm because it is baked in a cast iron skillet. Not only does this skillet pie taste amazing, it is the perfect addition to any Holiday table.
Preheat oven to 350º F and grease a 10.25 inch cast iron skillet
In a mixing bowl, combine the flour, brown sugar and salt. Grate or cut in the cold butter and mix into the flour mixture until a sand-like mixture is formed.
Press the crust evenly into the prepared skillet. Bake for 10 minutes.
While the crust is baking, in a separate mixing bowl, whisk the eggs, then add in the sugar, brown sugar, corn syrup, melted butter, salt, and vanilla. Whisk until well combined.
Add in the broken pecan pieces.
Pour the pie filling into the crust. Top with additional pecan halves if desired and bake for 45-50 minutes.
The pie is done when the center is no longer giggly and a toothpick inserted in the center comes out with thick caramel.
Remove from the oven and cool for at least an hour before slicing.
