This Easy Sweet Potato Casserole recipe is a classic, mashed sweet potatoes, seasoned, buttery and sweet with brown sugar are topped with golden brown toasted marshmallows.
3 1/2 poundssweet potatoes, peeled and cut into 1 inch cubes
6tbspbutter, unsalted
1/4cupbrown sugar
1 tsp vanilla
1tspsalt
1/2tspblack pepper
1/2cup pecans, chopped
2cupsminiature marshmallows
1/2tspcinnamon
1/4tspnutmeg

Preheat oven to 400ºF. Prepare a 9 x 13 inch baking dish with cooking spray.
In a large pot, cover sweet potatoes with water and bring to a boil over high heat. Continue to boil uncovered until potatoes are fork tender, about 20 minutes. Remove from heat, drain and mash until no more large clumps remain.
To the mashed potatoes add butter, brown sugar, vanilla, cinnamon, nutmeg, salt and pepper. Mix until combined.
Fold in pecans.
Transfer to the baking dish and spread out evenly. Top with marshmallows.
Bake in 400ºF oven for 10-15 minutes, until the marshmallows are melted and golden brown on top.
