Easy Sweet Potato Casserole

Sweet Potato Casserole is a Holiday staple! This Easy Sweet Potato Casserole recipe is a classic, mashed sweet potatoes, seasoned, buttery and sweet with brown sugar are topped with golden brown toasted marshmallows. It isn’t Thanksgiving without sweet potatoes!!

This Easy Sweet Potato Casserole Recipe is so simple, you could even let the kids help make this one!! Mine love helping to mash the potatoes and of course covering the whole thing in mini marshmallows!

Are you a marshmallow person? Honestly, I only like marshmallows when they are toasted, with chocolate and smushed between two graham crackers…or on top of sweet potatoes. They add so much sweetness and the toasted crunchy marshmallow can’t be beat!

How to make Sweet Potato Casserole

To make this easy sweet potato casserole start by peeling and slicing the potatoes. For this recipe, I used 4 sweet potatoes, about 3 1/2 pounds. Peel the skin from each of the potatoes, then slice in half, then half again and into 1 inch sized pieces.

Place the sliced potatoes in a large pot and fill will water, just until it covers the potatoes. Bring the pot of potatoes to a boil, let them boil for about 20 minutes, until a fork pierces easily into the potatoes.

Drain the water from the pot with the potatoes. You can leave the potatoes in the same pot to mash or place in a large mixing bowl. I chose to transfer them to a mixing bowl so I didn’t scratch the surface of my pot.

Mash the potatoes with a potato masher or hand mixer until no large pieces are left. Add in the butter, brown sugar, vanilla, salt, pepper, cinnamon and nutmeg. Mix until well blended.

Fold in the pecans and transfer to a greased 9 x 13 inch baking dish.

Bake in a 400ºF oven for 10-15 minutes or just until the marshmallows are melted and golden brown on top. Serve warm.

Ingredients Needed for Sweet Potato Casserole

For this recipe you will need just a few simple ingredients:

  • nutmeg
  • salt

  • miniature marshmallows

Can I make Sweet Potato Casserole ahead?

If you have a million things to prepare for your Thanksgiving meal, you can definitely make this sweet potato casserole at least 2 days in advance.

To make this sweet potato casserole ahead, prepare the sweet potato filling as instructed in the recipe. Place in the prepared baking dish, cover with an air tight lid or plastic wrap and store in the refrigerator.

30 minutes prior to serving, remove the dish from the refrigerator and remove the plastic wrap. Cover the dish with foil and bake in a 400ºF oven for 20 minutes. The last ten minutes, remove the foil and top with marshmallows, continue to cook until they are golden brown on top.

Ingredients

  • 3 1/2 pounds sweet potatoes, peeled and cut into 1 inch cubes
  • 6 tbsp butter, unsalted
  • 1/4 cup brown sugar
  • 1 tsp vanilla
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup pecans, chopped
  • 2 cups miniature marshmallows
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg

Instructions

  • Preheat oven to 400ºF. Prepare a 9 x 13 inch baking dish with cooking spray.
  • In a large pot, cover sweet potatoes with water and bring to a boil over high heat. Continue to boil uncovered until potatoes are fork tender, about 20 minutes. Remove from heat, drain and mash until no more large clumps remain.
  • To the mashed potatoes add butter, brown sugar, vanilla, cinnamon, nutmeg, salt and pepper. Mix until combined.
  • Fold in pecans.
  • Transfer to the baking dish and spread out evenly. Top with marshmallows.
  • Bake in 400ºF oven for 10-15 minutes, until the marshmallows are melted and golden brown on top.
