This Apple Cinnamon Bread is twists and folds of cinnamon sugar and butter mixed with chunks of sweet, softened apples. Every bite is like biting into the gooey center of a warm, delicious cinnamon roll. We love to make this bread on weekend mornings or Holidays when we are with friends and family (or even as a gift).

How to use Instant Yeast?

For this recipe, and any bread recipe I make, I use Instant Yeast. The brand I prefer to use is this Saf-Instant Yeast. Instant yeast does not need to do an initial 5-10 minute bloom, what that means is you do not need to mix instant yeast with warm water and wait for it to bloom before using it.

Instant yeast is mixed right in with the flour and then the liquid is added to the dry ingredients. With the instant yeast, the dough will rise quicker and when I make bread or rolls, there is only a need to let the dough have one rise and then shape the dough how you are going to bake it, pop in the oven and watch it rise and bake to perfection.

How to Shape Bread Dough

For this Cinnamon Twist Bread recipe combine the yeast, flour and sugar. In a separate bowl or measuring cup combine the water, milk and butter. The liquid needs to be warm to activate the yeast, I like to use an instant read thermometer to make sure my water is around 115-120ºF. Add in the egg and knead the dough either in the mixer or by hand until the dough forms a ball and pulls away from the bowl of the mixer.

Place the dough into a greased bowl, cover and allow to rise for 20-30 minutes until the dough has risen. Roll out the dough onto a floured surface into a rectangle shape. The dough should be about 1/8 inch thick. Top the dough with the butter, cinnamon and sugar.

Add the chopped apples and roll the dough as tightly as you can lengthwise. Roll the dough all the way across, ending with the seam side down. Fold the dough in half and with a sharp knife, make slits into the dough about one inch deep into the dough.

To twist the dough, lift one side of the dough over the other, tucking the ends of the dough over one another. Place the dough into a greased loaf pan and bake for 15-20 minutes in a 350ºF oven.

Remove the dough and allow to cool for at least 30 minutes before slicing.

Ingredients

  • 2 1/4-2 1/2 cups flour
  • 2 1/4 tsp instant yeast
  • 1/3 cup sugar
  • 1/2 cup water
  • 1/4 cup milk
  • 4 tbsp butter
  • 1 egg
  • 1 tsp salt

Cinnamon Sugar Topping

  • 1/4 cup butter, softened or melted
  • 1 tsp cinnamon
  • 2 tbsp brown sugar
  • 1 cup apples, peeled and diced

Instructions

  • In the bowl of a stand mixer or large mixing bowl, combine the flour, yeast and sugar.
  • In a separate bowl combine the water, milk and butter. Heat in the microwave until the liquid reaches 120ºF. Add to the flour mixture and mix.
  • Add in the egg and salt. Knead the dough in the stand mixer for about 10 minutes, until dough pulls clean from the sides of the bowl. This can also be done by hand on a floured surface.
  • Place the dough into a greased bowl, cover and place in a warm place or oven on proof until the dough doubles in size, about 30 minutes.
  • Heat oven to 350ºF. Roll the dough out on a floured surface to a 1/8 inch thick rectangle.
  • In a bowl combine the butter, sugar and cinnamon for the topping. Spread this on top of the rolled out dough. Sprinkle the dough with the diced apples.
  • Roll the dough lengthwise from one end to the other. Fold the rolled dough in half at the center. Using a sharp knife slice each side of the halves one inch deep. Twist the dough by picking one side up over the other tucking the ends in at the bottom.
  • Place the loaf into a greased loaf pan and bake for 15-20 minutes, until the bread is cooked through.
  • Allow the bread to cool at least 30 minutes on a cooling rack before slicing.

Notes

Store cooled bread in an air tight container or zip top bag. This bread can be frozen as a whole loaf or in slices.
