Coconut Banana Bread is a moist and incredibly delicious sweet bread. I barely had taken this out of the oven before the whole fam starting slicing and devouring it.

This definitely is not your typical banana bread recipe, the addition of coconut pudding and coconut flakes adds so much amazing flavor making this the best banana bread! This simple bread recipe is perfect for breakfast, snacking or even giving as a gift.

How to make Coconut Banana Bread

This delicious banana bread recipe comes together with basic ingredients you probably already have on hand like; flour, sugar, coconut oil, eggs, cinnamon, nutmeg and baking soda.

The only ingredient you might need to pick up from the store is the coconut cream pudding mix. This is pretty important to this recipe as it adds a ton of flavor, texture and moisture.

To make this banana coconut bread recipe, start by combining the melted coconut oil, mashed bananas, eggs and sugar. Mix in a large mixing bowl until everything is well incorporated.

In a separate bowl whisk together the flour, baking soda, cinnamon, nutmeg, salt and pudding. Whisk until no lumps remain and the spices are blended in.

Add the dry ingredients to the wet ingredients and stir until everything is well combined. Mix in chocolate chips.

Pour the batter into a well greased 9 x 5 inch loaf pan. Bake the bread on the center rack of a 350ºF oven until a toothpick inserted in the center comes out clean.

The coconut on the top will begin to brown, if you feel that it is getting too golden, place a piece of foil over the top for the remaining cooking time. I usually check it after 45 minutes and place foil over the top for the last 5-10 minutes of cooking.

Can I freeze Banana Bread?

This banana coconut chocolate chip bread is a perfect sweet bread to make ahead and freeze.

If you are going to freeze this bread allow it to cool completely, then wrap in plastic wrap, then in a layer of foil before placing in the freezer. This will last in the freezer for up to four months.

Be sure to label the outside of the bread so you know what it is and when you made it.

Ingredients

  • 1/2 cup coconut oil, melted and cooled
  • 2 bananas, ripe
  • 2 eggs
  • 1 cup sugar
  • 1 1/2 cup flour
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 1 3.4 oz Instant Coconut Cream Pudding
  • 1/2 cup chocolate chips
  • 1/4 cup sweetened coconut flakes

Instructions

  • Preheat oven to 350º F. Grease a 9 x 5 inch baking pan
  • In a large mixing bowl or stand mixer combine the melted coconut oil, mashed bananas, eggs and sugar until well combined
  • In a separate bowl whisk together the flour, baking soda, cinnamon, nutmeg, salt and pudding mix.
  • Combine the dry ingredients with the wet banana mixture until well incorporated.
  • Fold in the chocolate chips, reserving a few for the top of the bread.
  • Pour the batter into the prepared baking pan. Sprinkle the top with coconut flakes and chocolate chips.
  • Bake for 45-55 minutes, until a toothpick inserted in the center comes out clean. Allow to cool before slicing.
