Ingredients

Let’s walk through what you will need to whip up a batch of these safe to eat no bake cookie dough bars:

  • Butter: the base of any good cookie recipe is always butter. I like to use unsalted butter when baking so that I can adjust the amount of salt as needed.
  • Brown Sugar: here to add sweetness and that classic cookie flavor
  • Vanilla: a baking staple that adds that perfect touch of flavor and brings out the cookie flavor in these cookie bars.
  • Milk: acts as a binding agent in these no-bake cookie bars to add moisture since we are not using eggs.
  • All Purpose Flour: be sure to heat treat the flour to make this safe to eat cookie dough.
  • Mini Chocolate Chips or Candies: it can’t be a chocolate chip cookie without chocolate chips.

Chocolate Frosting Ingredients

  • Semi-sweet Chocolate Chips: this makes for a rich, chocolate frosting. Milk chocolate can be substituted or even do half and half.
  • Coconut Oil– adding oil to the chocolate will help it melt and spread smoothly over the cookie dough.

How to Make No Bake Cookie Dough Bars

These Cookie Dough Bars can be ready in under 20 minutes! Let’s talk about how to make this easy recipe:

  1. Make the Cookie Dough: start with a large mixing bowl and an electric mixer, cream together the butter and brown sugar until smooth and well combined. The butter and sugar should look airy and soft when it is mixed.
  2. Add in the Remaining Ingredients: add in the vanilla, milk, salt, and flour to the creamed butter. Continue to mix with the electric mixer until combined.
  3. Fold in the Chocolate: use a spatula or the electric mixer to mix in the mini chocolate chips or candies.
  4. Press into the Pan: Line an 8 x 8 inch baking pan with parchment paper. Press the cookie dough into the bottom of the pan in an even layer.
  5. Chill the Dough: Cover the cookie dough with plastic wrap and place it in the refrigerator while you make the frosting.
  6. Make the Chocolate Frosting: make the frosting by placing the chocolate chips and oil into a microwave-safe bowl and microwave for 30 seconds, then in 10 second increments until melted, stirring between cooking times.
  7. Spread on the Frosting: pour the frosting over the chilled cookie dough and spread evenly with a knife or offset spatula.

Quick Tip

To make this raw cookie dough safe to eat, heat treat the flour before using it in this recipe.
To heat treat the flour, pour the flour onto a baking sheet and bake in a 350º F oven for at least 5 minutes. The flour should reach 160º F before use.
