- Slice the zucchini and yellow squash into equal slices.
- Dice an onion
- Mince the garlic, or use pre-minced garlic
- Grate the cheese
In a large cast iron skillet or non-stick pan pour in olive oil and heat over medium heat until shimmering. Add in the onion and saute for 1-2 minutes until it just starts to soften.
Add in the sliced zucchini and yellow squash, cook on medium heat, stirring frequently until the just tender. Add the minced garlic and saute until the zucchini and yellow squash are soft, not mushy.

Ingredients
- 2 zucchini, sliced
- 2 yellow squash, sliced
- 1 white onion, diced
- 2 garlic cloves, minced
- 1/3 cup parmesan cheese, grated
- 3 tbsp olive oil
- salt and pepper to taste
Instructions
- Slice the zucchini and yellow squash into equal rounds.
- In a large skillet over medium heat, pour in the olive oil and heat until shimmering.
- Add in the onion and saute, stirring frequently, until softened (2-3 minutes)
- Add in the sliced zucchini and yellow squash and continue to saute until soft, about 3 minutes.
- Add the minced garlic and cook until fragrant, about 45 seconds
- Top the sauteed vegetables with the grated Parmesan cheese and place on the top rack of the oven under the broiler for 3-5 minutes, until the cheese is melted.
- Season with salt and pepper to taste
