Spread 1 tablespoon butter on to both sides of the 2 slices bread. Cut a round piece out of each of the bread slices and remove the circle from the center.
Place the 12 inch cast iron skillet over medium heat and allow to heat up for 30 seconds. Place butter or cooking spray into the skillet.
Put the bread and circle cut out in the skillet and crack an egg into the center of the bread. Break the yolk of the egg if you like a hard egg, leave it whole if you want a runny yolk.
Cook the egg for 2-3 minutes, until the bread is brown and crisp. Flip and continue to cook on the other side for an additional 2-3 minutes until cooked through.
Serve immediately.
