Preheat oven to 350º F and grease a 12 inch cast iron skillet
In a large mixing bowl or stand mixer, cream together the butter and sugar until well combined
Add in the egg and vanilla, continue to mix until smooth
Add the flour, baking powder, salt, and lemon zest to the bowl and mix together with the electric mixer on medium until a soft dough is formed. Scrape down the sides of the bowl as needed while mixing.
Press the cookie dough evenly into the bottom of the prepared cast iron skillet.
Bake for 15-20 minutes until the edges are just golden. Remove from the oven and allow to cool in the pan.
Cream Cheese Frosting
While the cookie cools, prepare the cream cheese topping. In a mixing bowl add the butter and cream cheese. Beat with an electric mixer until smooth.
Add in the vanilla and half of the powdered sugar. Mix until combined.
Add in the remaining powdered sugar and continue to mix until the frosting is smooth.
Using a knife or spatula, spread the softened frosting over the top of the cookie.
Top with fresh fruits and berries in a pattern or randomly to create a beautiful fruit pizza.
