This Oatmeal Skillet Cookie with Chocolate Chips is the perfect blend of crunchy oats, warm cinnamon spice and buttery chocolate chip cookie all baked into one cast iron skillet cookie.
Preheat oven to 350º F and grease a 12 inch cast iron skillet
in a large mixing bowl combine together the 1 cup butter, 1/2 cup sugar, 1/2 cup brown sugar, 1 eggs, and 1 1/2 teaspoons vanilla. Use an electric mixer, stand mixer or wooden spoon to blend all of the wet ingredients together until they are well combined.
to the butter mixture add the 1 1/2 cups all purpose flour, 2 cups rolled oats, 1/2 teaspoon baking soda, 1/2 teaspoon baking powder, 1/2 teaspoon salt, and 1 teaspoon ground cinnamon. Use the electric mixer to combine the dry ingredients with the wet ingredients.
Scrape down the sides of the bowl as needed while mixing. fold the 2 cups semi-sweet chocolate chips into the batter with a sturdy spatula or wooden spoon.
evenly spread the prepared oatmeal cookie dough into your greased skillet. Bake the skillet cookie for 20-25 minutes. The edges of the cookie will be browned and the center will not jiggle if you shake the pan.
