Oven Roasted Sweet Potatoes with Dried Cranberries and Pecans are cooked in a simple glaze of cinnamon, nutmeg and honey. Perfect for Holidays or a simple side dish.
3-4sweet potatoes, peeled and chopped into 1 inch pieces
1 tbspolive oil
1/3cuphoney
1/2cupdried cranberries
1/4cuppecan pieces
1tspcinnamon
1/4tspnutmeg
1tspsalt
4tbspbutter

Instructions
Preheat oven to 400ºF. Grease a 9 x 13 inch baking dish.
In a large mixing bowl combine sweet potatoes, dried cranberries and pecans. Pour in olive oil, honey, cinnamon, nutmeg and salt. Stir until everything is well coated.
Transfer sweet potato mixture to the prepared baking dish. Dot the top of the potatoes with slices of butter.
Bake in preheated oven for 30-40 minutes, until a fork slides easily into the potatoes.
