In a large mixing bowl or stand mixer combine the 3 cups all purpose flour, 1 teaspoon sugar, 1 1/2 teaspoons salt, and 2 1/4 teaspoons instant yeast. Pour in the 1 1/2 cups warm water and mix together with a wooden spoon, dough hook or clean hands until a soft, slightly sticky ball is formed. About 2 minutes.
Cover the dough and rise for 20 minutes, dip fingertips into water and fold dough from four corners to the center. Lift from the side and pull the dough up to the center. Repeat 2 more times (a total of 3 folds-60 minutes).
After 1 hour, pour half of the 1/4 cup olive oil into the bottom of a 12 inch cast iron skillet. Brush oil along bottom and up the sides of the pan. place the dough into the center of the pan and cover again, allow to rise for 1 hour.
Heat the oven to 450º F
While the oven heats, pour the remaining oil over the dough and use fingers to press dimples into the dough and spread it out in the pan. Sprinkle with flaky sea salt before baking.
Bake for 18-20 minutes until golden brown and crispy.
