Ingredients
2-3 poundbeef chuck roast
2tablespoonsolive oil
1½teaspoonsalt
½teaspoonpepper
2 cupsbeef broth
1package onion soup mix
2 teaspoonsWorcestershire sauce
8Hoagie rolls
16slices Provolone or Swiss cheese

Instructions
Season the roast on both sides with salt and black pepper
Pour olive oil into skillet over medium high heat and then sear the roast on both sides for 2-3 minutes per side.
Place the roast in the slow cooker, pour in the beef broth.
Add in the onion soup mix and Worchestershire sauce.
Place sliced onions around the roast.
Cover and cook on low for 7-8 hours or high 3-5 hours, until tender
Remove the beef and shred with 2 forks, removing any fat as needed
Strain the liquid from the crockpot into a gravy strainer
Slice open hoagie buns, add shredded beef, onions and top each with two slices of cheese.
Place under the broiler for 1-2 minutes to toast the bun and melt the cheese.
