Slow Cooker Italian Beef Sandwiches are the perfect crazy day dinner. With pulled roast beef, pepperoncini, and shredded mozzarella cheese, these are always a family favorite.
16ouncepepperoncini, drain juice and save 1/4 of it
¼cupjuice from pepperoncini jar
16ounceGiardiniera
6-8hoagie buns
1 1/2 cupsmozzarella cheeseshredded

Instructions
Season the roast on both sides with salt and pepper.
Heat the oil in a large pot over medium high heat. Brown roast on all sides.
Place roast and juices from pan into a 6 quart slow cooker.
Pour in the Italian dressing mix, pepperoncini, pepperoncini juice and jar of Giardiniera.
Cook on low for 8-10 hours or high for 4-6 hours.
Take roast from slow cooker and shred. Then return to slow cooker.
Top sliced hoagie buns with some of the shredded beef, some vegetable from the slow cooker and shredded mozzarella. Place under the broiler for 1-2 minutes until the cheese is melted and bubbly.
