Preheat oven to 425º F and prepare a 12 inch cast iron skillet with a thin layer of butter or oil
In a food processor blend the 1 cup sweet potato and 1/2 cup buttermilk until smooth.
In a large mixing bowl whisk together the 2 cups all purpose flour, 1 tablespoon baking powder, 1 teaspoon salt, and 1 1/2 tablespoons brown sugar
Grate in the 6 tablespoons butter and toss to coat with the flour mixture.
Pour in the pureed sweet potatoes and buttermilk and stir with a wooden spoon to form the dough into a soft ball. Use a clean hand to knead the dough together.
Place the dough on a lightly floured surface and press or roll the dough out to about 1/2 inch, fold over and press out again. Repeat this roll out and fold 4 times before cutting out biscuits into 3 inch rounds.
Bake- place the biscuits into a 12 inch cast iron skillet and bake for 15-20 minutes until golden brown, puffed up and baked through.
Brush with honey butter or butter while still warm

These can also be baked on a parchment lined baking sheet if you don't own a cast iron skillet
Quickly cook sweet potato in the microwave by poking a few holes in the potato with a fork and cooking for 3-5 minutes. A fork will slide easily into the potato flesh if cooked all the way through.
