Instructions
Place a large, 12 inch skillet over medium heat. Add olive oil and potatoes, season with salt and pepper. Cook for 3-4 minutes until just crisp on the outside.
Add in sliced onion and minced garlic. Cook and stir for an additional 1 minute
Add sausage, apples and thyme to the pan and stir to combine. Continue to cook and stir the pan until the potatoes are soft and the turkey sausage is heated through, about 4-5 additional minutes.
