Instructions
Preheat oven to 350ºF. Grease a 9 x 13 inch baking dish
In a small bowl combine the melted butter, 1/2 tsp cinnamon and 1 tablespoon of the sugar. Mix until the sugar is dissolved.
In a large mixing bowl whisk the eggs until bubbly. Pour in the cream, milk, remaining sugar and cinnamon and stir until well combined.
Add the bread pieces to the cream mixture and fold in until all covered.
Pour one half of the bread mixture into the prepared baking dish. Top with apple slices.
Pour the remaining bread mixture layer and top with apple slices.
Drizzle the melted butter, cinnamon and sugar over the top of the bread pudding.
Place in the oven and bake for 50 minutes. The center will still be soft when the bread pudding is cooked. Remove from the oven and allow to cool for 10-15 minutes before serving.
Caramel Sauce
In a medium sauce pan over medium-high heat melt the butter. Add in the cream, brown sugar and vanilla. Stir until sugar is dissolved and bring to a boil.
Turn the heat down to low and simmer, stirring frequently until the sauce thickens to a syrup like consistency. This will take about 2-3 minutes. Remove from heat and serve.
