In a large mixing bowl, or stand mixer, combine together the 1 cup warm waterr, 1 tablespoon olive oil, 2 1/4 teaspoons instant yeast and 1 tablespoon sugar. Mix to combine.
Add in 2 cups all purpose flour and the 1 tablespoon sea salt. Mix together. Pour out onto a floured surface and knead for 4-5 minutes, adding additional flour as needed to produce a soft ball of dough. It should not be sticky.
Place the dough back into a greased mixing bowl and cover with a clean kitchen towel or plastic wrap and allow to rise for 30-45 minutes.
Place cast iron pan into the oven and heat to 450º F
Punch down the dough and cut into two equal halves. Cover the half you are not working with to keep it from drying out.
Roll the dough out into a 10-12 inch circle. Carefully place the dough into the well greased cast iron pan. Fold in any dough around the edges to form the crust.
Top the pizza with desired sauce and toppings.
Bake for 15-20 minutes, until the crust is golden brown and crisp.
