2chicken breasts, boneless, skinless, cut into 1 inch pieces
1cupmatchstick carrots
2cupsbroccoli, chopped
1/2cupred pepper, sliced
8oz mushrooms
1/2yellow onion, sliced thin
1/2tsp garlic powder
3tbspcanola or vegetable oil
Stir Fry Sauce
6tbspsoy sauce
6tbspwater
1tsprice vinegar
1tbspcorn starch
1 1/2tspsesame oil
1/2tspsriracha (chili sauce)
1tbspbrown sugar
1tbspfresh ground ginger
1tspgarlic powder
1tsp sesame seeds, for garnish (optional)

Instructions
Heat the vegetable oil in a large skillet over medium heat. Add the chicken, cook and stir for about 5-6 minutes until browned and cooked through. Remove the chicken to a clean bowl.
Add in the vegetables and cook and stir until just tender, 3-5 minutes
Add the chicken back into the pan with the vegetables.
Combine the ingredients for the stir fry sauce and stir until smooth
Pour the stir fry sauce over the chicken and vegetables and bring to a simmer until the sauce thickens and coats everything.
Garnish with sesame seeds if desired.
