1cupchicken broth
1/2 cup heavy cream
1/2cup sun dried tomatoes
1/2cupparmesan cheesegrated

Instructions
Place a large skillet over medium high heat and add in olive oil.
Season the chicken breasts on both sides with salt and black pepper. Cook the chicken for 4-5 minutes per side.
Remove the chicken from the pan and add in the garlic, thyme and red pepper flakes. Cook and stir for 30 seconds.
Pour in the chicken broth and scrape the bottom of the pan with a wooden spoon to get up any leftover chicken flavors.
Add in the heavy cream, sun dried tomatoes (drained from the oil) and place the chicken back into the pan.
Bring the sauce to a low boil and allow to simmer for 5-7 minutes over medium low, until the sauce thickens, stirring frequently.
Make sure the chicken is cooked to 165º F
Lastly, add in the parmesan cheese and fresh basil, stir to combine and melt the cheese. Allow the chicken to rest for about 5 minutes before slicing and serving.

This recipe is best served the same day or frozen for later. To freeze place in an air tight container for up to 3 months. Reheat in the microwave, stirring frequently to make sure the cream doesn't separate.
