This easy chicken recipe is said to be so good, you can expect a proposal when you make it for your significant other. That’s a pretty big deal…I would be glad if my kids just did the dishes after I make this for them. 😆

Marry Me Chicken Ingredients

To make this simple chicken recipe you will just need a few simple ingredients, items you most likely already have in your kitchen. To make this recipe you will need:

  • Chicken– I prefer to use boneless, skinless chicken breasts with this recipe, but skinless chicken thighs would also work.
  • Olive oil– Extra Virgin olive oil for cooking and browning up the chicken
  • Salt– I like to use Sea Salt when cooking, regular table salt will work fine too. Just season to taste.
  • Black Pepper– ground black pepper

  • Garlic– I keep a jar of minced garlic in my refrigerator that makes it so easy to have fresh garlic on hand.
  • Thyme– fresh adds so much delicious flavor. If you are using dried time add 1 teaspoon
  • Red Pepper Flakes– the mild touch of spice is perfect in this recipe
  • Chicken Broth– just a little for flavor and for making a nice, smooth sauce
  • Heavy Cream– this is where the creamy sauce comes in. Heavy cream is just so good when it is heated up until it becomes a nice, thick sauce.
  • Sun-dried Tomatoes– these can just be bought at the store. They are usually in a glass bottle with oil.
  • Parmesan cheese– makes the sauce similar to an Alfredo sauce with a rich, cheesy flavor.
  • Basil– as a last final addition, fresh basil is the best in this recipe

How to Make Marry Me Chicken

The first step in making this delicious chicken recipe is to prep the chicken. If you have chicken breasts that are really thick, run a sharp knife through the center of the chicken breasts to split it into two thinner pieces.

Next, season the chicken on both sides with salt and pepper. Then, heat up a large skillet, I like to use my large cast iron skillet, over medium high heat. Add in a little olive oil and then cook the chicken on both sides for 4-5 minutes per side.

Remove the chicken from the pan and in the same pan, add in the garlic and thyme and cook for 30 seconds, until fragrant.

Pour in the broth and use a wooden spoon to deglaze the pan (scrape up anything from the bottom of the pan). Then add in the cream, sun-dried tomatoes and place the chicken back into the pan.

Bring the sauce up to a simmer, slow boil, over medium low heat and stir frequently until the sauce thickens and the chicken is cooked through.

The best way to know if your chicken is full cooked is with an instant read thermometer, this is the one that I use in my kitchen. Thermoworks Thermopen.

Once the sauce has thickened, about 5 minutes, add in the parmesan cheese and fresh basil. Stir until the cheese has melted.

We like to serve this chicken with sundried tomato cream sauce over cooked pasta, rice or even cauliflower rice. Or just serve it on its own with a salad and some crusty bread, so good!!

Ingredients

  • 2 pounds chicken breasts boneless, skinless
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon garlic minced
  • 1 tablespoon fresh thyme or 1 teaspoon dried thyme
  • 1/2 teaspoon red pepper flakes or more if you like it spicier
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup sun dried tomatoes
  • 1/2 cup parmesan cheese grated
  • 2 tablespoons fresh basil

Instructions

  • Place a large skillet over medium high heat and add in olive oil.
  • Season the chicken breasts on both sides with salt and black pepper. Cook the chicken for 4-5 minutes per side.
  • Remove the chicken from the pan and add in the garlic, thyme and red pepper flakes. Cook and stir for 30 seconds.
  • Pour in the chicken broth and scrape the bottom of the pan with a wooden spoon to get up any leftover chicken flavors.
  • Add in the heavy cream, sun dried tomatoes (drained from the oil) and place the chicken back into the pan.
  • Bring the sauce to a low boil and allow to simmer for 5-7 minutes over medium low, until the sauce thickens, stirring frequently.
  • Make sure the chicken is cooked to 165º F
  • Lastly, add in the parmesan cheese and fresh basil, stir to combine and melt the cheese. Allow the chicken to rest for about 5 minutes before slicing and serving.

Notes

  • Nutrition facts are just an estimate
  • If the chicken is too thick, simply run a sharp knife through the center splitting it into two pieces. 
  • This recipe is best served the same day or frozen for later. To freeze place in an air tight container for up to 3 months. Reheat in the microwave, stirring frequently to make sure the cream doesn’t separate.
