These Chicken Teriyaki Skewers are so easy to make and have so much delicious flavor. Who doesn’t love eating teriyaki chicken on a stick? This simple recipe is made with chicken thighs and simple, pantry staple ingredients. Perfect for a weeknight dinner or make a whole bunch to feed a crowd.

Grilled Teriyaki Chicken Kabobs

I never know, is it skewer or kabob? I honestly use the terms interchangeably, so no judgement here. We love this teriyaki chicken recipe. It only takes 30 minutes to marinade and then on to the grill for about 10 minutes.

We love to serve these tasty chicken skewers over a bed of Coconut Rice or with a simple salad, like this Strawberry Spinach Salad.

Ingredients for Teriyaki Chicken Thigh Skewers

The great thing about this recipe is you probably have all of these marinade ingredients on hand. Here is what you will need, or add to your list so you can pick it up from the store:

For the teriyaki marinade:

  • 1/2 cup Soy Sauce (can use low sodium soy sauce)
  • 1/2 cup water
  • 1/2 cup light brown sugar
  • 2 cloves of garlic (or 2 teaspoons of garlic powder)
  • 1 teaspoon freshly grated ginger ( I prefer fresh ginger, but ground ginger can be substituted, just add 2 teaspoons)
  • 1 teaspoon sesame oil
  • 1 teaspoon rice vinegar
  • 1/2 teaspoon red pepper flakes

I like to use chicken thighs with this recipe, however, chicken breasts can also be used as well if you prefer. Simply cut the chicken into about 2 inch pieces, then marinade.

Mix together the marinade, then place chicken into a zip top bag or container and add in 1/2 of the teriyaki marinade. Place in the refrigerator for at least 30 minutes or even overnight.

How to Grill Teriyaki Chicken Skewers

Once the chicken is marinade you are ready to assemble your skewers.

  • If you are using wooden skewers, be sure to soak them in water for at least 30 minutes before adding the chicken. I usually just start these soaking as soon as my chicken is in the marinade.
  • Thread the chicken pieces onto the chicken skewers, leaving room at the bottom of the skewer so you can pick up and turn the chicken easier on the grill.
  • Place the skewers onto a grill that has been heated High, 375-400º F
  • Grill the chicken for about 5-7 minutes per side until the chicken is cooked through. The exact time may vary, the best way to know if your chicken is cooked through is with a good instant read thermometer. You want the chicken to reach 165º F.
  • When the chicken is almost done, or at about 145º F, brush the remaining teriyaki sauce over the chicken skewers on all sides for extra flavor.
  • Take the chicken off of the grill and place on a clean plate. Cover with foil and allow to rest for at least 5 minutes before enjoying.

What to serve with Teriyaki Chicken Kabobs

You can be really adventurous and make this an amazing meal, or just keep it simple and serve with corn and watermelon. These are a few of the sides we love to grill up and serve with this chicken recipe:

  • Grilled Zucchini
  • Grilled Asparagus
  • Simple Coleslaw

How to Thicken Teriyaki Sauce

If you would like to thicken the rest of the teriyaki sauce, add 1/2 tablespoon to the remaining teriyaki sauce and stir until combined. Heat the sauce in a sauce pan over medium heat until it comes to a boil. Stir constantly until thickened.

To thicken in the microwave, add the cornstarch and stir to combine. Microwave in 30 second increments, stirring between until sauce thickens.

Ingredients

  • 6-7 chicken thighs boneless, skinless

Teriyaki Marinade

  • 1/2 cup soy sauce
  • 1/2 cup water
  • 1/2 cup brown sugar
  • 2 garlic cloves minced
  • 1 teaspoon fresh ground ginger
  • 1 teaspoon sesame oil
  • 1 teaspoon rice vinegar
  • 1/2 teaspoon red pepper flakes

Instructions

  • Cut chicken into 2 inch pieces.
  • Combine the ingredients for the teriyaki marinade in a separate mixing bowl
  • Place the cut up chicken into a zip top bag or air tight container. Pour 1/2 of the teriyaki marinade over the chicken. Marinade in the refrigerator for at least 30 minutes, up to over night.
  • Soak wooden skewers for at least 30 minutes, before threading the chicken pieces onto the skewers.
  • Place chicken onto grill that has been heated to High, 375-400º F
  • Cook the chicken for 5-7 minutes per side.
  • When the chicken is almost done or at an internal temperature of 145º F, brush the remaining teriyaki sauce on all sides of the chicken skewers.
  • Continue to cook until the chicken is cooked through and reached an internal temperature of 165º F
  • Remove the chicken from the grill and cover will foil, allow to rest for 5 minutes before serving.
