Easy Coconut Rice

If you haven’t tried coconut rice yet, I am beyond excited for you to give it a try! It is so flavorful and adds so much to any dish you are making. One of my favorite benefits of making this recipe is how amazing it makes the whole house smell.

This recipe rice with coconut milk is really so easy to make and I can’t wait to hear how it turns out for you!

How to make Coconut Rice

The steps to making this Coconut Rice Recipe really couldn’t be any easier! To make coconut rice, start with good pot with a lid, at least 2 quarts.

Combine jasmine rice, coconut milk, water, sugar and salt in the sauce pan and give a stir to combine all the ingredients.

Bring the liquid to a boil over medium high heat. Once the liquid is at a rolling boil, place the lid on the pan and turn the heat down to low and allow the rice to continue to cook for 20 minutes. After 20 minutes, remove the pan from the heat and allow the rice to sit for 5 minutes before fluffing with a spatula and serving.

What to serve with Coconut Rice

This coconut rice has a really mild flavor, so don’t think that it can only go with certain main dishes. This rice recipe can be really versitale and pairs great with any protein, curry recipes or even stir fry.

Coconut Rice Recipe

This flavorful Coconut Rice pairs perfectly with curries, grilled proteins and so much more. Perfect for a simple side dish.

Ingredients

  • 1 cup jasmine rice
  • 3/4 cup water
  • 3/4 cup coconut milk (unsweetened)
  • 1/2 teaspoon sea salt
  • 2 teaspoons sugar

Instructions

  • In a 2-3 quart sauce pan, combine rice, water, coconut milk, sea salt and sugar.
  • Bring to a boil over medium high heat. Once the liquid is boiling, cover with a lid and turn heat down to low.
  • Cook covered for 20 minutes on low. Remove from the heat and allow to sit for 5 minutes before stirring with a spatula and serving.

Notes

  • To make toasted coconut, place 1/4 cup sweetened coconut flakes into a skillet over medium heat. Stir constantly until golden. Remove from the pan immediately as soon as the coconut is golden and crunchy.

How to store Coconut Rice

If you are making this rice ahead or maybe you just made too much, this rice is easy to store for future use. To store rice in the refrigerator, place in an air tight container for up to 4 days. To reheat, place a small ice cube in the container and just loosely place the lid on top of the container, don’t seal it. Heat in 30 second increments, stirring in between until heated through.

To freeze rice, place in zip top bags and lay flat in the freezer for up to 2 months. To reheat, open just a small part of the bag at the top and microwave in 30 second increments until heated through.
