Soy Ginger Flank Steak Marinade

This Soy Ginger Flank Steak Marinade is perfect for taking a plain steak to an extraordinary steak! Soy, ginger, lime, apple cider vinegar, oil, cilantro, maple and garlic add so much flavor and tenderness to flank steak every time. 

I’m always happy to fire up the grill for this simple flank steak marinade recipe with a side of grilled asparagus.

This is the best flank steak marinade! Your fam is going to love it! We use flank steak a lot in our weekly menus, because.. Who doesn’t love steak? But who can afford to feed the whole fam steak?! 

Flank steak is an affordable option for feeding your fam steak. It cooks quickly and has so much flavor. Flank steak is sliced into 1/2 inch slices, which makes it go along way. Perfect for feeding a lot of people.

How to make Marinade for Flank Steak

To make this simple Soy Ginger Marinade for Flank Steak, combine the ingredients for the marinade either in a zip top gallon sized plastic bag, or an air tight container large enough to fit your steak. 

Trim off any excess fat from the steak if needed. 

Put the steak into the marinade and place in the refrigerator. Allow your steak to marinade for at least 30 minutes before grilling or cooking. I say 30 minutes because some days, that is all the time I have!! If you are doing a short time, make sure all of the air is out of the bag and it is sealed tight, this will help the meat marinade quicker.

How long to Marinade Flank Steak

Ideally, you would want to let your steak marinade for at least to hours for maximum flavor and tenderness. 

If you plan ahead and have the time, this flank steak can be marinated overnight, or get it all set in the morning and the it will be perfect in time for dinner that night. The longer you marinate, the more flavor that will be infused throughout the meat, which is always a good thing. 

When I made the flank steak for these photos, the steak marinaded for 4 hours before cooking.

How to Grill Flank Steak

  • Heat your grill up to high heat, mine ran between 400-475ºF. 
  • Remove the flank steak from the marinade and allow any excess marinade to run off back into the bag. Discard the used marinade. 
  • Place the flank steak onto the grill and cook for 6-7 minutes on each side until the steak reaches your desired doneness. 
  • I like to cook my steaks to medium rare, so I cook them to an internal temperature of 135-140ºF. If you prefer your beef less pink in the center, you can cook it to 145-150ºF for more well done. Use an instant read thermometer to measure the temperature of your steak.
  • Remove the steak from the grill and let it rest before slicing for at least 10 minutes. This will allow the juices to stay in the meat instead of running out all over your cutting board and drying out the meat.

How to slice Flank Steak

Flank steak is one that needs to be cut against the grain, unless you enjoy chewing A LOT! On a flank steak you can see the grain running from top to bottom. 

Slicing against the grain means you want to slice in the opposite direction of where the grain is running. On a flank steak slice from one side to the other. 

Another tip for slicing flank steak is to make smaller slices, typically around 1/2 inch.

Other ways to cook marinated flank steak

If you do not own a grill, don’t walk away from this recipe! Flank steak can easily be cooked in the oven.

To cook this steak in the oven:

  • Preheat the oven on Broil
  • Grease a baking sheet or Broiler pan with cooking spray.
  • Place the steak on the Broiler pan and into the oven 6 inches under the broiler.
  • Cook the steak for 5-7 minutes on each side until cooked to desired doneness.

Ingredients for Easy Flank Steak Marinade

  • soy sauce; low sodium can be used in this recipe
  • ginger; I prefer to use fresh grated, but if you only have dried, that will work fine
  • lime juice
  • apple cider vinegar
  • maple syrup
  • oil; vegetable or canola
  • garlic
  • cilantro

Ingredients

  • 1 1/2-2 pound flank steak

Flank Steak Marinade Ingredients

  • 1/4 cup soy sauce
  • 1/4 cup lime juice
  • 2 tbsp apple cider vinegar
  • 2 tbsp canola oil
  • 1 tbsp maple syrup
  • 1 tbsp ginger, finely grated
  • 3 tbsp garlic, minced
  • 1/4 cup cilantro, chopped

Instructions

  • In a gallon sized zip top plastic bag or air tight container, combine the ingredients of the marinade.
  • Place flank steak in bag with marinade and seal tightly, releasing all of the air. Once the bag is sealed use your hands to mix around the ingredients of the marinade and make sure all of the steak is covered.
  • Place the steak and marinade in the refrigerator for at least 2 hours or up to 24 hours before grilling.
  • Heat grill to high heat.
  • Remove the flank steak from the marinade allowing any excess marinade to drip off back into the bag. Discard the marinade.
  • Place the steak on the grill and cook on each side for 5-7 minutes, until the steak reaches your desired doneness.
  • Remove steak from grill and allow to rest for at least 10 minutes before slicing against the grain to serve.

The following is a temperature guide to help you cook your steak perfect every time:
  • Rare: Final temperature 115ºF
  • Medium Rare: Final temperature 125ºF
  • Medium: Final temperature 135ºF
  • Medium Well: Final temperature 140ºF
  • Well Done: Final temperature 150ºF
